The Rocca Sveva Valpolicella Ripasso Superiore is crafted using the traditional “ripasso” technique, where freshly made Valpolicella wine is refermented on the pomace of the dried grapes used for Amarone and Recioto.
After months of maturation in large oak casks and bottle refinement, the result is a wine of striking clarity and brilliance, with a deep ruby hue and garnet reflections that hold beautifully over time.

Freshly produced Valpolicella Superiore undergoes ripasso on the Amarone pomace, triggering a second maceration and fermentation lasting 8–10 days. After racking, the wine ages for 12–18 months: 30% in barriques and 70% in large oak barrels, developing its characteristic structure and complexity.
Intense aromas of morello cherry in spirit, dried plum, forest floor, clove, fine oak, cinnamon, and hints of licorice root.
Elegant and well-balanced, with silky, harmonious tannins and a lively, dynamic acidity that adds length and freshness.
