The Soave Classico DOC Castelcerino is an authentic expression of the territory from which it comes and of the beautiful volcanic hills of Soave. The base is Garganega, symbol of elegance, freshness and minerality, this Soave comes from grapes coming from vineyards in the valuable Additional Geographical Unit (U.G.A.) Castelcerino. We are located at an altitude of 280 meters, with north-east and north-west exposure. Here a unique microclimate, combined with the volcanic soil, gives the wine a strong personality. The Garganega, a native variety of Soave, is harvested by hand at the beginning of October to ensure the perfect balance between maturity and freshness. The alcoholic fermentation takes place in steel at a controlled temperature, preserving the purity of the varietal aromas. Bright straw yellow colour, the nose is recognizable by its smoky and sulphurous notes, accompanied by hints of flint, citrus and field flowers. In the mouth, finally, it impresses with its creaminess and great freshness. The finish is dry, long and persistent. It is a wine that stands out for its strong character and the ability to evolve in bottle. Ideal companion for a wide range of dishes, it is perfect with fish preparations. Excellent also with tasty white meats, risottos and cheeses of medium ripening.
